Growing up in Ireland, one of my most favourite memories is my mum’s home baked apple tart made with Granny Smith apples. She made the dough from scratch and had the recipe written on a piece of paper. She made it so many times – it was that popular it was one of the first baked goods to sell out at our local baking fundraising events. Us kids grew up and got busy with our lives and the apple pies became less frequent. We then moved house and the recipe was lost, but I remember how happy I was every time I smelled sweet apple tart being made. Continue reading

Sausage rolls (stuffed with veggies)
I’m always looking for ways to use up the veggies that are in the fridge and this recipe is idea. Most children love sausage rolls – I say most because while my youngest will eat them, he doesn’t love them. These sausage rolls are full of good veggies and are perfect for lunch, dinner, snacks and parties. Continue reading

Healthy after school snacks the kids will love!
For those of us in the southern hemisphere we are well into term 3 of school, and for those in the northern hemisphere it’s time to start a new school year. Recently the boys have been coming home from school ravenous. Knowing dinner isn’t far away I’m reluctant to give them snacks that are too filling but there’s no way they will last until dinner hour without something. The lovely Jennifer from Beautifully Alive has come to my aid and put together a list of quick snacks that will keep everyone happy! Continue reading
Top 5 healthy snacks for school lunchbox
And just like that term 2 has started for us here in New South Wales. Blue skies are scheduled and dare I say it but the two weeks of school holidays hasn’t been too bad. Maybe it’s because we got out of Sydney for a mini-break or maybe it’s because I worked through some of it. Either way, we’re all ready for this term to kick into gear. Continue reading

Mini quiche boats
It’s been a little while since I’ve posted a recipe. And today I’ve got a good one! My kids love quiche but it can get a little boring so to mix it up I’ve hopped on the band wagon and tried them in the ‘stand and stuff’ tortilla soft shells. They’ve been a big hit mainly due to the novelty of the ‘boats’. Continue reading
Healthy biscuits – perfect for a snack or with a cuppa
Breakfast, lunch and dinner I can usually dish up. Snacks however can stump me. I tend to stick to the same thing and overload on fruit, which is not a bad thing but it’s nice to mix it up at times. Continue reading
Lunch that’s not a sandwich
I’m a lover of bread. I’m a lover of pasta. And I mean I’m a lover! Lately though I’ve tried to cut back on my loves and just change my diet slightly – cut out wheat and try add more healthy but enjoyable food. I was feeling sluggish with not enough energy to keep running a household, a job that I enjoy and two active kids. For me it was either all or nothing so I went cold turkey and cut it out of my diet completely. Not the right decision… Continue reading
