With the weather getting warmer in the southern hemisphere it’s time to get out the easy, two minute recipes that means you’re not spending too much time in the kitchen and more times in the outdoors.
This one literally takes two minutes to make but you don’t lose out on flavour – it’s deliciously tasty, healthy and filling. It’s my current ‘go to’ meal.
Ingredients
- 2 eggs
- 1 avocado
- Feta
- Lemon
- Black pepper and Himalayan salt
Method
- Crack two eggs into a bowl; cover gently with warm water; place in microwave for 40 seconds. At this stage keep an eye on the eggs – you want them softly poached so depending on the power of the microwave you may need to add another 10 – 20 seconds. But be careful – if you leave the eggs in too long they’re explod and you’ll spend your time in the kitchen cleaning the microwave!
- Mash avocado; add a squeeze of lemon
- Pop eggs on a plate and add the mashed avocado. Sprinkle feta over the avocado and give it a squeeze lemon. Season with pepper and salt.
I’ve also added smoked salmon to mix it up, and you could also add some rye or wholemeal toast to keep you fuller for longer.
