Nachos

I’ve been asked for the recipe for my nachos so here it is. This feeds a family of four with little left over. This is one dish my kids love and a bonus is it tastes yummy!!

Ingredients

  • 500g beef mince
  • 1 can of kidney beans or Four bean mix
  • Taco sauce (I use medium)
  • 2 packets of corn chips (Doritos etc)
  • Cheddar cheese
  • Parmesan cheese
  • To serve: avocado, sour cream and extra cheese

Directions

  1. Pre-heat oven to 160 degrees fan forced
  2. Cook the mince until browned
    Drain the kidney beans and add to the mince (or bean mix). Add taco sauce and leave to simmer
  3. Place the corn chips in a baking tray (for our family I use 1 and a half bags of corn chips) – and nibble on the rest!)
  4. Add the mince mixture over the corn chips
  5. Grate cheese over the nachos (I like my cheese but put as much as you like over it)
  6. Put tray in the oven and cook until cheese has melted
  7. Serve with mashed avocado, sour cream and extra cheese
