I’ve been asked for the recipe for my nachos so here it is. This feeds a family of four with little left over. This is one dish my kids love and a bonus is it tastes yummy!!
Ingredients
- 500g beef mince
- 1 can of kidney beans or Four bean mix
- Taco sauce (I use medium)
- 2 packets of corn chips (Doritos etc)
- Cheddar cheese
- Parmesan cheese
- To serve: avocado, sour cream and extra cheese
Directions
- Pre-heat oven to 160 degrees fan forced
- Cook the mince until browned
Drain the kidney beans and add to the mince (or bean mix). Add taco sauce and leave to simmer - Place the corn chips in a baking tray (for our family I use 1 and a half bags of corn chips) – and nibble on the rest!)
- Add the mince mixture over the corn chips
- Grate cheese over the nachos (I like my cheese but put as much as you like over it)
- Put tray in the oven and cook until cheese has melted
- Serve with mashed avocado, sour cream and extra cheese
